And we may have overdone it a little: this Cabernet Cortis clearly enjoyed its time on the mash and now shows plenty of edge. Unfiltered, unfined and as cloudy as a January day under a blanket of fog – but 100 % honest from Wattens. Low in sulphites, low on patience: best drunk soon, before it gets any silly ideas.
There was not much to be had yet from three-year-old vines. The grapes, however, were extra sweet and just right for the first experiment. We drink it anyway. Obviously!
